My name is Iris Amdur and I am a sustainable building consultant and student of award-winning cookbook author Nimi Sunilkumar. I have sponsored this fundraiser to rebuild Nimi's home and teaching kitchen which incurred structural and moisture-related damage in the massive flooding that occurred in Kerala, India in mid-August.
With funds raised in collaboration with Nimi's international culinary students, the sustainable design community, and those who support women's empowerment around the globe, we will ensure that Nimi can continue to offer cooking classes to visitors to Munnar, provide a healthy living environment for her family and healthy meals for children in her neighborhood school. Working with an architectural, engineering and construction team based in India, we will design and build Nimi’s healthy home and kitchen offsite using decommissioned shipping containers. This will allow us to control quality and to erect the structure quickly in the mountainous region where Nimi lives. Using her home as a prototype, we intend to produce prefabricated sustainable home kits for people displaced by flooding in Kerala, by wildfires and hurricanes in the United States, and wherever high-quality, low-cost homes are needed.
